This chilled soup is a harvest of garden vegetables. Tomatoes, cucumbers, bell peppers, fresh mint and cilantro are blended together with onions, garlic and a hint of cumin.

3 1/2 cups chopped yellow or red tomatoes (about 1 1/2 pounds)
2 cups chopped seeded peeled cucumber
1 cup chopped yellow bell pepper
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1/2 cup chopped red onion
2 cloves garlic, chopped
3 regular dates or 1 1/2 medjool dates, pitted
2 tablespoons white wine vinegar
1 tablespoon chopped fresh mint
1 tablespoon chopped fresh cilantro
2 teaspoons ground cumin
1/4 teaspoon ground pepper


Place tomato, cucumber, peppers, red onion, garlic and dates in a blender and process until smooth. Add remaining ingredients and pulse several times until well combined. Cover and chill for at least 1 hour or overnight.

I've been making this recipe with yellow tomatoes, cucumbers, and mint from my garden and it is delicious. I've made the recipe with the ingredients listed above, except that I omit the onion. For the 3 dates, I used honey dates that I bought from When I made this I blended everything smooth except for the mint, cilantro,cumin and pepper. Those just got pulsed so that the gazpacho doesn't turn green, and you have little flecks of mint and cilantro floating around in the soup. I did think that the dates should be smoothly blended in rather than having little pieces of dates floating around, so that is what I did.
