Rated this recipe:

I've been making this recipe with yellow tomatoes, cucumbers, and mint from my garden and it is delicious. I've made the recipe with the ingredients listed above, except that I omit the onion. For the 3 dates, I used honey dates that I bought from 7hotdates.com. When I made this I blended everything smooth except for the mint, cilantro, cumin and pepper. Those just got pulsed so that the gazpacho doesn't turn green, and you have little flecks of mint and cilantro floating around in the soup. I did think that the dates should be smoothly blended in rather than having little pieces of dates floating around, so that is what I did.
