No need to feel guilty! These delicious truffles are made with nuts, seeds and fruit.

1 1/2 cups raw cashews
1 cup raw almonds
1 medium apple, peeled, cored and sliced
1 teaspoon ground chia seeds
8 dried apricots, minced
cinnamon (for coating)
unsweetened shredded coconut (for coating)
natural, non-alkalized cocoa powder (for coating)


Grind the cashews and almonds into a powdered meal in a high-powered blender, then add the apple slices, ground chia seeds and dried apricot and blend again until smooth.

To make truffles, chill mixture for 1-2 hours, then form into small balls and roll each ball in either the cinnamon or a mixture of coconut and cocoa powder.

Note: May also be used as a spread for apple or banana slices.

Rolled them in coconut, cocoa powder as well as Doc Fuhrman's Ceylon cinnamon. Mmmmmmmm.

This is good and portable! I pack a couple in my purse so if I get hungry during the day, I don't crash my lifestyle and eat at McD's! TY for sharing!
