Make your own non-dairy milk using heart-healthy walnuts, cashews and hemp seeds. It’s delicious on its own or stirred into your morning oatmeal.

1 cup walnuts, soaked 6-8 hours
1 cup raw cashews, soaked 6-8 hours
1/2 cup hemp seeds
1 cup dried apple, soaked in 1 cup water until soft (save soak water)
3 cups water
1 teaspoon cinnamon


Place walnuts, cashews, hemp seeds, apples and soaking water, water and cinnamon in a high-powered blender. Blend until smooth. If desired, strain through a nut milk bag or fine mesh strainer. Store in a glass jar.

Recipe says to soak walnuts, cashews and dried apples.  What & how much do I soak walnuts and cashews in?  I am assuming the 3 cups of water is not soaking water and I only save apple water?

Since you are only saving the apple soaking water, it doesn't matter how much water you use to soak the nuts.  Use enough to cover them.

I'm surprised any soaking is required. I just started making walnut milk: Just add chopped walnuts and grind up in the blender then add water  and blend. The amount of water depends on the desired level of creaminess. (I used one cup of water to 3 tablepoons walnuts.) I add lots of Trader Joe's vanilla too. The dried apple and cinnamon is a great idea. Though fresh apple would work too; just use less water.

If you have a high powered blender like a Vitamix, you don't even need to pre-grind the nuts. You can really just throw everything in the blender and blend unsoaked and unground. No need to strain either, just add less water for thicker consistency and more water for thinner. Very quick and easy.

Has anyone subbed in another nut for the cashews. I'm needing to avoid lectins and am wondering if there would be a good nut to sub for this?
