These bars are not only a tasty dessert, they are perfect to grab for a quick breakfast. Try the optional spice blend if you are feeling adventurous.

2 cups quick-cooking rolled oats (not instant)
1/2 cup unsweetened shredded coconut
1/2 cup raisins or chopped dates
1/4 cup chopped walnuts
2 large ripe bananas, mashed
3/4 cup finely chopped apple
2 tablespoons ground flax seeds


Preheat oven to 350 degrees F. Mix all the ingredients in a large bowl until well combined. Press into a 9-by-9-inch baking pan and bake for 30 minutes. Cool on a wire rack. When cool, cut into squares or bars.

Note: For Banana Oat Spice Bars, mix in:
1/2 teaspoon ground cinnamon
1/4 teaspoon allspice
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/8 teaspoon black pepper

I love these bars!!!

Definitely don't be afraid to alter the recipe too! They are great as is and I recommend making them that way the first time especially if you are unexperienced with cooking in general.

I add dried currents, raisins, flax seed, sunflower seeds and all sorts of stuff to these!

When I make these- they go so quickly. Everyone in my house loves them, even the people who aren't into eating healthy. It's the one healthy sweet I can make that I know is a crowd pleaser.

So easy and so good! I've found that you don't need the sugar and you don't need to be precise with the measurements either. These freeze well.

Delightfully Delicious. I have made these twice and love them. Tonight I made them again and used dried apricots and pecans to vary it. I am going to try dried cranberries and almonds if I can find cranberries with no added sugar. And maybe even some dried cherries with macadamai nuts.

Delicious. Here are the variations I used: 1) double batch cooked in 13 x 9 pan still at 350, still 30 minutes 2) apple butter instead of applesauce (because that's what I had) 3) cinnamon and cloves

This is the first recipe I have tried from this site... these bars are just wonderful! Both my husband and I really liked them.

My bananas weren't very big so I used the applesauce - and I accidentally used 1/2 cup instead of 1/4 cup. They were very good anyway.

I will definitely make them again.

Soo good! They smell like heaven and taste wonderful! I also love that you can easily vary the recipe. We used about 1/4 cup chopped dates and 1/4 cup zante currants. Wonderful!
And they're so easy to make! I wanna try this again but with rolled oats instead.

I hate to post a negative review but my husband told me I should share my opinion. After reading all of the rave reviews I was excited to make them. I made a double batch using applesauce. I made this dish to take to a non-ETL birthday party, however after tasting it I decided not to take them after all. I thought that the consistency was rather dry and mushy - I think that I may have liked it a little more if I had used rolled oats instead of the 'quick old fashioned oats' the recipe called for.

I had to agree with one previous poster, I didnt really like these. They tasted like bananas and oats, same as the other banana/oat desserts. My husband loves them though.

I was interested in trying these because so many people had commented on how good they were. We've made them a few times now and varied the ingredients/sweetness hoping for something we could use leftover bananas in. If you like bananas in general you will probably like these. For us they were just ok. I will stick to freezing the leftover bananas for smoothies and using my regular granola bar recipe.

I have made these several times. They go quickly and are easy to make. I grind some of the oats in the vitamix for a different texture. Its a winner.

These were pretty good!
Based on other reviews I eyeballed everything and so they were a teeny tiny bit dry. I also didn't have raisins or dates and I think it needs them. The cinnamon on top was a good suggestion.

If I make them again I will do two layers and put a fruit puree layer in between.

I liked these the first time I made them, I used the applesauce and no date sugar and dates not raisins. My son loves them. I just tried them with pumpkin instead of bananas and added 1 tsp cinnamon, 1/2 tsp nutmeg, 1/2 tsp ginger and put more dates 3/4 cup dates (since pumkin isn't as sweet as bananas) instead of 1/2 cup.. I really liked it with the pumpkin too!

These were really good. . . .My Husband loved them as well. The first thing he said was "You can definately make these again". And that was before I told him I had "goofed" them up. I forgot to put the walnuts in, couldn't find unsweetened coconut for them, and used rolled oats instead of the quick cooking oats. We are looking forward to making them with some of the variations listed above. Very quick and easy to make. This recipe is defiantely a keeper !!

I forgot to buy coconut so substituted sunflower seeds chopped in food processor - worked just fine! Also I prefer fruit sweetened dried cranberries to raisins and also added 1 tsp. cinnamon. I pureed the bananas and applesauce in the food processor and added a couple of pitted dates in place of date sugar. They were wonderful!

Have to say that this is the only recipe that I've tried from the book that I didn't like at all. These were rubbery and not terribly tasty - And I added applesauce!

I am constantly craving these bars! The raisins give them an added sweetness that becomes addicting. Haven't tried it with the shredded coconut yet.
They are great for on-the-go snacks or for when you just don't feel like cooking.

I don't mind these as long as they are warm. I find them rather sweet and too soft . Perhaps the large flake oats would give them some body.

The Banana Oat Bars are so good - they have really helped with cravings for bread or sweets. I've made them several times, varying the ingredients.

The last batch was the best of all. It had 3 bananas, 2 very ripe pears, 1 shredded apple, 1 shredded carrot and 4 big medjool dates, all mashed together, then raisins, walnuts, cinnamon, 5-grain cereal instead of plain oats, non-sweetened coconut, and about 1/2 cup flax seed meal, which really helps to hold the bars together.

I also really like the bars with applesauce baked on top. I make the applesauce from 3 apples, 5 dates, 1 orange and cinnamon. Spread thinly on top before baking, it bakes to a non-sticky, lovely brown finish, not too sweet. (This leaves almost 2 cups of delicious applesauce for other things.)

I've tried using this recipe to make date bars, but am still working the details out. It's delicious, but crumbly and messy. I put half the mix in the pan and bake about 20 minutes, then spread the dates (blended smooth) fairly thinly over top, then use the other half of the mix dropped in little pieces on top, then bake another 20 minutes or so.

I do refrigerate these bars, and sometimes freeze them. I always add cinnamon, which is supposed to help stabilize blood sugar and just tastes wonderful with these ingredients.

Oh my really helped my sweet cravings this is week two and so far so good with or without applesauce it is great ,I find without the applesauce I chew longer which is good

Yummo! These are outstanding! I really liked them with the added spices. Very sweet, especially if you use dates. I'm seriously going to have to double this recipe next time, per casinera's instructions (above).

And FWIW, they work really well with regular rolled oats instead of quick oats. DH says he likes them even better this way.

These bars are fabulous. I made them for my husband who is not following the ETL program and he loved them. I have substituted dried cranberries for the raisins, used three bananas instead of two and will try different nuts. I give them 5 stars.

I love this recipe. I make it at least once a week and share with friends. I also take it one step farther, after cooling I cut the bars and turn them over onto a wire rack and bake them for another ~27 min. to get them toasty all the way around. I love that they freeze so well. Yummy.. 5 stars!

HELP! I want so much to love these! They smell great baking, I follow the recipe EXACTLY except for the date sugar, because I cannot find any. Both attempts they came rubbery and tasted like cardboard!

As a newbie to this program I made these by the book. Found them to be very bland and growing mold on day three. Should I attempt these again I will up the spices and maybe add powdered ginger.

These are delicious. I always have them on hand.

I found them a little bland the first time I made them so I add 1 tsp cinnamon and 1/4 tsp apple cider vinegar and it perks the flavor up. I also chop up a large apple and put in the whole thing. It is probably more than 3/4 cup.

They also freeze well.

These are OUTSTANDING snack bars. As for the person who said they "grew mold after 3 days," it's because she doesn't realize that unless you add chemical preservatives (which processed manufacturers use, and which are unhealthy ... the bars should be stored in the frige or freezer.
Of all the comments above, those people who didn't give this recipe a 5-star rating, were those who didn't follow the amounts specified on the ingredients. I've made the recipe 4 times, and each time they were perfect. If you slice them into bars, then place two of them in a snack baggie & stack them in your freezer, you can grab-and-go. They don't freeze as hard as ice cubes, so they can be munched immediately after leaving the freezer. Because I followed the direction explicitly, they didn't crumble and held together well. Note: if they fall apart, it's because the cook either changed the ingredients, the amounts specified, or spread them too thinly in the cooking pan. Spread them about 3/4 of an inch thick. You'll be very pleased. Some people criticized the addition of "date sugar", but the recipe did not call for date SUGAR -- only dates. Please look on google to see the nutritional value of dates. They are absolutely AMAZING! There are only 2 things I don't understand: if applesauce is a good alternative ingredient -- what ingredient does it replace? This matters, or one wouldn't know how much applesauce to add. (Does it replace the 3/4 cup of apples, or the 2 bananas? Also, everyone knows that instant and quick oats are highly processed, and have little nutritional value. One must choose conventional rolled oats -- not "quick" or "instant" oats. Also, the person who typed up this recipe must have made a mistake, because the first line of ingredients calls for "quick-cooking" oats, then on the same line, says "NOT instant" --- Quick-cooking oats are exactly the same as "instant" oats, so this doesn't make sense. Use the conventional rolled oats, and the recipe will be PERFECT. Bravo to Dr. Fuhrman's staff for posting such a healthy recipe.

OK... I have been making these bars for a long, long ...long time now and see some folks are still confused about the Applesauce. This original recipe never had Apples listed as an ingredient, it had Applesauce listed as an 'option' ...along with Date Sugar as an 'option', also Flax Seed wasn't in the original ingredient list either. Some time in 2012, Apples and Flax Seed got added and Date Sugar got dropped. The oats are not quick, not instant, and not steel cut, but Old Fashion "Rolled Oats".

I use 1/2 cup Unsweetened Applesauce in place of the Apple now listed, and use 4 Tablespoons of Date Sugar then making sure I use the Raisins instead of the Dates. I also added 2 Tablespoons of ground Flax Seed.

I toss everything in a bowl and mix it up well, or sorta smear it together well with my stout wooden spoon as it's 'thick'. Then press it into my 9" pie dish as I don't have a square baking dish, and bake at 350 degrees for 30 minutes.

Watch it and let it get only slightly brown around the edges. Remove from oven and set it out to cool a bit before cutting it into 8 pieces, mine are pie wedged, and then I carefully lift them out and onto one of my round dinner plates.

After it's completely cool I slip the plate and all into a one gallon zip-lock bag and keep in the refrigerator as sitting out will dry them out and they'll mold in 2 or 3 days per how warm your kitchen is.

Lately I've grown tired of bananas, so ALTERNATE now with 1 cup plain, cooked, mashed pumpkin in place of the 2 ripe bananas. And also add 1 teaspoon Cinnamon, 1/2 teaspoon Cloves, and 1/2 teaspoon Nutmeg.

These bars are a fantastic tasting, easy to make, grab and go, satisfying 'in a pinch' meal bars, that I've used as a main stay now for almost 10 years to fill hunger gaps when I know I'll be around SAD food. Like at carnivals, festivals, fairs, etc. type events.

These just came out of the oven, and they are delicious with a nice hot cup of black coffee!  I made a double batch using dates, and in 1/2 I put unsulfered dried apricots too (a little tart, but nice contrast).  The only thing I'll add next time is cinnamon!  Love cinnamon!  But, these are so easy to throw together and yummy!  I did not add the date sugar, and they are plenty sweet!  Thanks for sharing the recipe!!  If I could figure out how to rate it, I'd give it 5 stars!!

I make these all the time but I have changed the recipe a little. I increased the walnuts to 1/2 cup and the flax seeds to 4 tablespoons. I use 3 bananas and a large apple (1 1/2 if small) and add 1/2 teaspoon apple cider vinegar. It's just a small amount of vinegar but it makes quite a difference in the taste. The extra bananas and apples solve the dry crumbly problem.

I made these for the first time this morning and I am hooked! I struggle with snacks sometimes as I am called out to work at odd hours of the day and night. I have a thermos and take some compliant soup or curry but sometimes you need something will stop me from weakening I hope and keep me on track..

I really enjoyed these. They are quite filling and heavy for their size. Take the time to really mix everything well. I was very pleased they turned out just like the photos and a batch allows you to meal prep for a week although I'd freeze half so you don't eat the same thing every day and spread it over two weeks.
