Ingredients:

1 mango, peeled, pitted and cubed
3 drops tabasco or hot sauce, or to taste
2 tablespoons fresh lemon or lime juice
1/2 teaspoon vegetarian worcestershire sauce
1/4 teaspoon ground black pepper
1 cup green, yellow and red bell peppers, diced
1 cup cucumbers, peeled and diced
1 carrot, grated
1/2 cup onions, diced
1 cup tomatoes, diced
3 cups tomato juice, homemade or no salt added
1 clove of garlic, crushed or 1/2 tsp. garlic powder
minced chives or green onion slices for garnish

Instructions:

Combine all ingredients except the garnishes. Mix thoroughly and chill. Best if prepared one day in advance. Garnish with chopped chives or green onion slices. VARIATION: replace the mango with chopped peaches or pineapple chunks. Makes 8 servings, 64 calories each.

This was pretty tasty, although I made a few changes. I used frozen peaches, because I didn't have any mangoes. (I thought I had frozen mangoes that I was going to substitute for the fresh, but they turned out to be peaches.)I also used low sodium v8 juice instead of tomato juice, because the Safeway I go to didn't have any low sodium tomato juice. Next time I will add more Tobasco. Or maybe I'll just add some vodka and pour it into a tall glass garnished with celery stalks! ;-)
