Cauliflower with Masala Sauce

Masala is a tomato-based sauce flavored with onion, garlic, cumin and curry. It’s a healthy and tasty complement to a dish of steamed cauliflower.

Ingredients
1 medium onion, chopped
5 cloves garlic, chopped
30 ounces diced tomatoes, fresh or packaged in BPA-free cartons
1 1/4 teaspoons mild curry powder
3/4 teaspoon hot curry powder
1 1/2 teaspoons ground cumin
1 teaspoon Dr. Fuhrman's MatoZest or other no-salt seasoning blend, adjusted to taste)
1/2 cup garbanzo bean flour (see note)
1 head cauliflower, steamed
Instructions
Water saute onions and garlic until soft.

Add diced tomatoes and 1/4 cup water cook about 5 minutes. Add curries and cumin, cook a few more minutes.

Place in bowl and use immersion blender to puree (or use a food processor or regular blender). Slowly add garbanzo flour until thickened.

Serve over steamed cauliflower.

Leftover sauce can be saved for another use. It will keep in the refrigerator for 3-4 days.

Note: Bob's Red Mill brand offers a garbanzo bean flour.
