I decided to do the real thing about my weight and health. I did a lot of research and came across many, many references to Dr. Fuhrman and Eat To Live. I simply had to find out what all the fuss was about. I went to my local bookstore, pulled a copy of Eat To Live and sat down and started reading it right there. When I finished reading Dr. Fuhrman's introduction, I knew this was the real thing. This was the ultimate game changer. In the words of Yoda, "Do or do not do, there is no try." I bought the book, and I consumed it. My eyes and mind were thirsty for the truth. It was quite an education, quite an eye opener, to say the least.
I started instituting the changes into my life little by little. I love making all kinds of homemade stews and soups with healthy veggies and whole grains. I have rediscovered beans, the dieter's best friend because of their resistant starch. I received a crockpot for Christmas and can't wait to start cooking with dried beans and making all kinds of healthy and satisfying vegan recipes.
At my heaviest, several years ago, I was about 270 pounds. For a 5 ft.2 in. woman, that is needless to say, not a good thing. When I began this most recent journey in earnest, I was probably about 238. I lost forty pounds as of the last weigh-in. I haven't weighed myself in over a month, but I'm pretty confident that the loss has continued. I have hardly anything to wear because everything is too big. My doctor took me off my blood pressure and cholesterol meds after I lost the first twenty pounds. My blood pressure continues to be excellent.
My ultimate goal weight would be about 120 pounds, so probably seventy more pounds to go. But the overriding goal is optimum health. I want to be around for a long time. I want to live all there is out of life. I want to be here to see my grandchildren whenever they come along. I want them to say, that's our Nana. She's a little bit crazy, and she's skinny and wiry, but boy is she healthy. We want to be just like her.
