Mock Potato Salad

We're pretty sure you won't miss traditional SAD potato salad! Try this: substitute cauliflower for potatoes and use a delicious nut and seed-based "mayo".

Ingredients

1 large (or [2] small) heads cauliflower
1 1/4 cups raw cashews
1/2 cup hemp seeds
2 lemons, juiced
2 teaspoons smoked paprika
1 tablespoon white miso
1 tablespoon Dijon mustard
3 cloves garlic
1 teaspoon white vinegar
1 3/4 cups water
1/2 red onion, diced
1/4 cup fresh dill, diced

Instructions:

Place cauliflower in a pot of boiling water and cook for 5 minutes. Cauliflower should still be firm. Set aside.

Place remaining ingredients except cauliflower, onion and dill in a high powered blender and blend on high until smooth.
Transfer to a large bowl and mix in the cauliflower, onion and dill.
