Spinach and Artichoke Dip

Ingredients

1/2 cup raw cashews
1/4 cup hemp seeds
3/4 cup water
14 ounces firm tofu, drained
3 tablespoons apple cider vinegar
1 1/2 tablespoons Dijon mustard
2 cloves garlic
1/2 teaspoon xanthan gum
1 cup cooked spinach, packed and squeezed after cooking, chopped
1 cup frozen artichokes, thawed and chopped
1 lemon, juiced and zested

Instructions:

Blend cashews, hemp seeds, water, tofu, vinegar, mustard and garlic in a high-powered blender for 1 minute or until smooth. While blender is running, add the xanthan gum and turn off.

Combine spinach, artichokes, nutritional yeast and lemon in a mixing bowl. Stir in blended tofu mixture.

Serve with raw vegetables.
