At our last checkups we both were diagnosed with being on the edge of becoming diabetic. In addition, I had a pre-cancerous skin condition and suffered from yeast infections for years. I started looking for something that wasn't a temporary diet, but a diet we could follow as a new way of eating forever. That's when I came across Dr. Fuhrman's website.It was the week before Thanksgiving and we decided to take the Six Week Challenge. We both thought we can do anything for six weeks. The first thing we did was read Eat To Live. Then we cleaned our kitchen of what we now call "junk food" meat, sugar etc. Of course, the first real challenge came right away. What do we eat for Thanksgiving? We ended up finding a great vegetarian restaurant and having a fabulous six course meal. We were stuffed on veggies.
For those six weeks I swore off bread entirely. My body started changing rapidly. Then one week I had a few crackers with my soup my skin and yeast problems became inflamed again. Because of this diet I discovered that I am gluten intolerant. This runs in my family, but I had never before experienced the difference in how I would feel when leaving out wheat and instead stuffing myself with kale, chard and fresh fruit.
My husband loves the food. He is a great chef and this opened up a whole new way of cooking. We are enjoying doing this together. I'm the sous chef and he adds the seasoning. Our favorite breakfasts are smoothies and veggies with potatoes. We share the smoothies with all our guests and they are all surprised that they are stuffed not only with fruit but spinach or chard.
Our after picture was taken after the Six Week Challenge. At that time our combined loss was 30 pounds. As of today, April 1, 2011 we are down a combined 50 pounds (me 24; Bob 26) we are continuing to lose about one-half a pound a week.
