Mediterranean or Stone Pine Nuts (pinus pinea) are the finest quality pine nuts. Their flavor is complex, yet lighter and more delicate than the more common, widely available Chinese, Korean or Mexican pine nuts which are harvested from a different species of pine trees. 

All pine nuts have exceptional nutritional value. They are good sources of vitamin K1, vitamin E2, and the minerals zinc, non-heme iron, phosphorus and manganese.

Mediterranean pine nuts, however, provide a particularly high content of excellent quality protein. This feature makes them especially useful as a nutritional supplement for athletes. They are also beneficial for those who want nutrient-rich calories without excessive fat. At 34 percent protein by weight, Mediterranean pine nuts are richer in protein than any other plant food, including soybeans (10%), sesame seeds (18%), sunflower seeds (21%) and even hemp seeds (33%). 

Mediterranean pine nuts are lower in calories than other pine nuts and have a favorable omega-3 to omega-6 ratio, almost 10 times higher than other pine nuts.

How do you tell the difference between Mediterranean and other pine nuts? Most commonly available pine nuts are cone-shaped with dark coloration at the smaller end, whereas those from the Stone Pine are long, with an even diameter. 

Enjoy them as a topping for your salad or soup, and entrees or process them with fresh herbs into pesto. They are also good just by themselves!
