Cooking Directions:

Heat 1/4 cup water in a large nonstick skillet. Add your choice of vegetables, cover and cook until crisp-tender, about 6-10 minutes, depending on the vegetable, stirring occasionally. Uncover, add desired amount of Mexican Olé Sauce and your favorite cooked beans and continue cooking until mixture is heated through. If desired, add a small amount of water to adjust consistency.

Mexican Olé Burrito

Heat ¼ cup water in a large nonstick skillet. Add 1 sliced green bell pepper, 1 sliced medium onion, and 4 cups of broccoli florets, cover and cook for 5 minutes or until broccoli is tender, stirring occasionally. Add 1 ½ cups cooked black or kidney beans, 1 ½ cups chopped tomatoes and a jar of Mexican Olé Sauce and continue to cook until heated through, about 1 minute. Spread the filling mixture on whole grain flour tortillas or large romaine leaves and roll up. (Serves 4)

Mexican Enchilada Bake

To make a Mexican Enchilada bake, lightly oil a 13” X 9” baking dish. Prepare Burrito filling (above) and spread on the bottom of the dish, then using 9 corn tortillas, layer tortillas and filling mixture, using 3 tortillas for each layer. Top with remaining filling mixture. Bake at 350 degrees for 20 minutes or until heated through. Serve with guacamole and salsa. (Serves 4)
