1/4 cup fresh lime juice
4 tablespoons date sugar
1/4 cup water
2 tablespoons rice wine vinegar
1 small head napa or savoy cabbage, shredded
1 red bell pepper, julienned
1 small jicama, julienned
2 carrots, julienned
1/2 small onion, finely chopped
4 tablespoons unhulled sesame seeds
1/2 cup currants
10 Brazil nuts, chopped
romaine lettuce, shredded or spring mix (optional)


For dressing, whisk together lime juice, date sugar, water, and rice wine vinegar in a small bowl. Set aside.

Toss together the cabbage, bell pepper, jicama, carrots, onion, sesame seeds, currants, and Brazil nuts in a large salad bowl.

Add the dressing and toss.

If desired, sprinkle with extra sesame seeds, currants, and chopped Brazil nuts.

This may be served on a bed of shredded romaine lettuce or spring mix.

I thought this salad was absolutely delicious. The lime juice dressing is perfect. Really, the only problem is the hassle of doing the julienne cuts, but it was worth it. I'm seriously thinking about buying a gadget to make those pretty cuts easier. Its a nice looking salad, and very tasty too.

Claudia, the Pampered Chef julienne peeler (looks like a potato peeler) is really nice for this sort of thing. I love it for zucchini. Wonder if you'll ever see this here . . . :-)

Hi Cindy. Found your comment here! I posted my original comment in June of 2008, so since then I did get a mandolin, and am very happy with it. I have seen some julienne peelers, but was not happy with them. I really like the mandolin, although I know they are dangerous.

This was a great taste change for us. Light, bright and crisp. I didn't have jicama, but we liked it without it. Nice presentation, too.

This was good. A little oil would help some. I used a food chopper and that saved a lot of time.

This is an excellent salad! I made it yesterday to serve today at our Suncoast Nutritarian gathering. It was a big hit. I couldn't get any jicama even though it has been in the stores for weeks - not when I needed it! I also didn't use the raw onion as my DH can't eat raw onion. I used Napa cabbage and some regular cabbage to add the extra crunch that the jicama would have given. It is really pretty so nice for a group gathering. There were 10 of us and we had lots of regular salad fixings to so the recipe as is was plenty for us.

This was wonderful! I brought it to our family Easter dinner and it was a big hit with everyone. I used a sweet onion.

Delicious! Made a few minor changes
Used 3 T of black sesame seeds
Used half red cabbage & half green cabbage
Used 3 fresh moist dates instead of date sugar and used afoot processor to mix all dressing ingredients
Added 1 T of balsamic vinegar

In the top favorite salads

A great salad. I did add a little sesame oil. Next time I would reduce seeds by one T to allow for 1T oil. I think red pepper flakes might be good also. I didn't have jicama either so I added some daikon radish. It was good.
