Ingredients:

6 cups carrot juice
1 cup green pepper, chopped
1 cup red pepper, chopped
1 cup broccoli, chopped
1 cup mushrooms, chopped
1 cup zucchini, chopped
1/2 cup onion, chopped
6 cloves garlic, minced
4 cups organic spinach, chopped or organic baby spinach
1 tablespoon basil
1 tablespoon oregano
1 tablespoon garlic powder
1 tablespoon Spike seasoning
2 cups cornmeal
1 cup walnut pieces
1 cup pasta sauce, no or low salt (optional)

Instructions:

Preheat oven to 350 degrees. In a large soup pot bring the carrot juice to a boil and stir in all the vegetables, herbs and seasonings. Simmer for 20 minutes until vegetables are tender. Slowly add the cornmeal to the soup pot and stir constantly over low heat for 5 more minutes. Remove from the heat and stir in the walnuts. Spoon into a casserole dish or two loaf pans and bake uncovered for 30 minutes. If desired, top with pasta sauce and bake for another 5 minutes.

Note: This recipe is a healthy alterntive for meatloaf.
This loaf will hold together better by the next day, so if a firmer loaf is desired, refrigerate overnight and reheat the following day.

I made this and did not care for it. It was edible but pretty bland. My husband refused to eat more than one piece. Maybe if it had more onion or spices or something it would be better but I don't think I'll try it again which is disappointing because it sounded really good.

I didn't mind this at all.
It was ok, could definitely do with more 'flavour'.
I added quite a lot of fresh herbs & added a lot more sauce on the top and it was quite tasty.

This was a delicious recipe. I strained the vegetables and cooked the cornmeal in the vegetable juice, I was worried the polenta wouldn't cook as well with the vegies. It was great. Four star

Delicious and unique dish. The flavor and texture is outstanding. It's somewhere between a loaf and stuffing. I used all perfectly ripe and organic ingredients. I let the top get a bit crusty. I also baked it with a loose layer of tomatoes, garlic, mushroom and onion. I served it with marinara sauce and sauted spinach, mushrooms and garlic which made a nice presentation. After my husband ate this, he said, "I don't know what I just ate ... but it was delicious!". I will certainly make this again. Thank you!
