Mint Nice Cream

You deserve a treat! How about some Mint Nice Cream for dessert tonight?

2 ripe frozen bananas (see note)
1 cup spinach
2 Medjool dates or 4 regular dates, pitted
1 tablespoon raw almond or cashew butter
2 tablespoons unsweetened soy, hemp or almond milk
6 large mint leaves or 1/4 teaspoon peppermint extract
2 tablespoons 100% cocoa chocolate chips, optional


Blend ingredients in a high-powered blender until smooth and creamy.

If using chocolate chips, blend all ingredients except the chips, then add chips and pulse just until chopped and well dispersed.

Note: Freeze ripe bananas at least 8 hours in advance. Peel bananas and seal in a plastic bag before freezing.

I liked it. Didn't add the dates as I figured the bananas would make it sweet enough and it did! Also was out of almond butter. It did take a bit more almond milk for my vitamix to process it. Delicious, refreshing treat! Will make again!

This is delicious. I used spicy Asian greens instead of the spinach. So much better than I would have imagined!

Best dessert we've tried yet! Great for SAD dinner parties. Changes: swapped chocolate chips for cocoa nibs and almond butter for sunflower seed butter, used regular dates + 1/8c Sultana raisins but Medjool would be better than regular dates. All changes were due to availability but I'd stick with the cocoa nib swap even if chips were available. Also doubled the fresh mint. :)
