Everyone loves guacamole and you can feel good about serving it because avocados are a good source healthy fats.

4 ripe avocados
2 cloves garlic, pressed
1/4 cup onion, finely chopped
1 red pepper, finely chopped
2 celery stalks, finely chopped
2 tablespoons lemon juice
1 cup tomato
1 small jalapeno pepper
1/3 cup cilantro


Mash avocados well and combine with remaining ingredients. . Cover and refrigerate.

Use as a dip for veggies, place in a pita pocket or serve with Ezekiel tortillas cut into small triangles and heated until crisp in a low oven (200 degrees) for 1 hr. 15 min.

traditional guacamole does not have garlic,celery, or red pepper in it. I also suggest using fresh lime juice instead of lemon... this will prevent the guacamole from turning brown. Do not use a metal knive for cutting the avocados, or a metal utensil for mashing it. This will keep it fresher longer.

I made this and it was great and it was gone in the same day I made it and there was no browning and I used silver utensils I didn't read I wasn't suppose to, till afterwards. it was great and no problems and everyone loved it I didn't have tomatoes so I used chopped tomatoes rinsed out of a can worked great I use a green bell pepper different taste but everyone loved it. and I used fresh lemons for juice. I did add paprika Red pepper and a little cumin gave it down home taste. I also think we make are own traditional recipe . I never follow a recipe to the T always have to add my own flair :)

Best way to keep guacamole from turning dark is to keep the seed in the guacamole.
