2 cups frozen strawberries
1 frozen banana
4 regular dates or 2 Medjool dates, pitted
1/2 cup unsweetened soy, hemp or almond milk
1 cup whipped aquafaba (see note)


Blend strawberries, banana, dates and non-dairy milk in a high-powered blender until smooth and creamy.

Place in a bowl and gently fold in whipped aquafaba.

Note: To make whipped aquafaba, use a hand beater or stand mixer to whip together 3/4 cup bean liquid (liquid from a 15 ounce can) and a 1/2 teaspoon of lemon juice or a 1/4 teaspoon cream of tartar. Whip for 5 minutes or until mixture forms stiff peaks. (This will yield more than one cup. Leftover whipped aquafaba will keep overnight in the refrigerator)

What can I use in place of banana?

You could add coconut, or just extra dates, plus more non-dairy milk as needed. You might also add walnuts.

I did not have any frozen strawberries, so I used frozen sweet cherries instead. I also omitted the frozen banana because I thought it would be too sweet since there were dates in the recipe. It turned out great! I was also glad I that I had left out the frozen banana because my vitamix had a tough enough time blending the frozen cherries, dates and the small amount of soy milk. Lots of stopping and scraping to get it to blend. The leftover whipped aquafaba stored in the fridge overnight did not hold up at all, next time I'll either make less or just pitch it.

And if you mess up like I did and put the entire aquafaba in it, it tastes like a light strawberry cool whip. ??

Great!  The first time I made this I tried “improving it” and was disappointed, so determined to try again except follow the recipe this time. Glad I did! Tasted like strawberry ice cream with a hint of banana.

Light and fluffy, not too sweet. I can tell that will make this many more times in the future.
