Wake up your smoothie routine with some exotic island flavors. Try coconut water blended with tropical fruits, greens and a piece of fresh ginger.

1 cup coconut water
1/2 ripe banana
1/2 cup frozen mango chunks
1/2 cup frozen pineapple chunks (see note)
2 cups chopped kale
1/2 inch piece fresh ginger, peeled and chopped


Add ingredients to a high-powered blender and blend until smooth.

Note: An additional 1/2 cup of mango can be substituted for the pineapple.

This is delicious - need I say! I doubled the recipe and added 1/4 tsp cayenne pepper - in place of ginger (next batch I'll use ginger). I also added lime juice and zest (organic). I almost always try to stay with organic young thai coconut - in mother nature's carton ;) This recipe is a great base that allows for many variations on greens and spices. Thank you!.

5/9/17: I made this again, using ginger instead of cayenne pepper; I like it even more with the ginger, as the recipe calls for. I also used collard greens. Great recipe.

Had it this morning and it was great.
