This dish is ready in minutes! Fresh green beans are quickly steamed and then tossed with cherry tomatoes, red onion and a tangy basil dressing.

1 1/2 pounds slender green beans, ends trimmed
1 cup cherry tomatoes, sliced in half
2 tablespoons chopped red onion
2 tablespoons balsamic vinegar
2 tablespoons fresh lemon juice
1/2 cup water
1/4 cup plus 2 tablespoons raw almonds
1/4 cup raisins
1/3 cup fresh basil leaves
1 teaspoon Dijon mustard
1 clove garlic


Steam green beans for 6 minutes or until crisp-tender. Transfer to a bowl and combine with tomatoes and red onion.

In a high-powered blender, blend the vinegar, lemon juice, water, 1/4 cup of the almonds, raisins, basil, mustard and garlic until smooth.

Toss string beans with desired amount of dressing. Chop remaining almonds and sprinkle on top.

This dressing is the best ever, if you as I have missed the good acidity balance of a traditional oil and lemon or vinegar dressing - love it. Thank you VERY much :o)

This salad is delicious! This week at my local farmer's market I got fresh green beans and cherry tomatoes, so this salad was perfect. I like to soak the almonds and raisins for a little while before blending. The leftover dressing will be great on another salad tomorrow.

Made this salad last night for the second time with green beans and cherry tomatoes from my garden. Delicious! Dressing will be super over other types of green salads. We both enjoyed it.

I added some arugula for my extra greens intake and sunflowers seeds on top instead of almonds. The dressing is fantastic and it makes me wanna have another serving now. It's a winning salad for basil lovers!

I like this a lot.  It has some good crunch and zing to the flavors.  It also works well for lunch the next day.  Rating:  4 out of 5.
