All the flavors of an enchilada are packed into this delicious, nutrient-dense soup. It's loaded with black beans and vegetables and topped with avocado, cilantro and crispy tortilla strips.

8 cups low sodium or no-salt-added vegetable broth
3 cups cooked black beans or 2 (15 ounce) cans low sodium or no-salt-added black beans, drained
7 ounces low sodium green chillis
6 ounces tomato paste
1 1/2 cups chopped tomatoes
1 1/2 cups finely chopped carrots
1 1/2 cups finely chopped celery
16 ounces chopped mushrooms (any variety)
2 cups chopped cauliflower, fresh or frozen
1 1/2 cups frozen corn
5 cloves garlic, minced
1 medium zucchini, chopped
1 onion, chopped
1 tablespoon chili powder
1 tablespoon garlic powder
3 tablespoons cumin
1/8 teaspoon cayenne pepper, or to taste
5 corn tortillas
1 ripe avocado, chopped
1/4 cup chopped cilantro


Add all ingredients except tortillas, avocado and cilantro to a large soup pot. Bring to a boil, cook on medium for 45 minutes or until vegetables are tender. Add more water or broth as needed for desired consistency.

Toast or bake corn tortillas until very lightly browned and crispy. Break into pieces.

Garnish soup with chopped avocado, cilantro and baked tortilla chips.

Note: Makes a lot, so plenty to store in refrigerator and/or freezer.

Very good soup. Has a definite enchilada flavor. Next time I will garnish with a squeeze of lime, too.

Have a query on this recipe which sounds delicious and I'd like to try it.

Before I do so can someone tell me if the ingredient "7 ounces low sodium green chillis" a tinned or bottled product? Can I use fresh chillis, if so jalapenos or padron peppers. 7 ounces sounds rather hot to me. Maybe half green pepper half jalapeno?

Would appreciate some help. Very new to this website. Also not used to Mexican style food (live in England).

Green chilies come in a can ... Usually found in the Mexican food section of the grocery store and they are very mild , they come chopped or whole....

This takes a lot of chopping, but is a really good soup. My husband really likes it, and we served it to SAD eaters who really enjoyed it too.

I wouldn't put any corn in this at all, as ALL corn & corn products are GMO. I've read that some frozen corn can be organic, but I haven't seen it in any stores where I shop.

This soup was delicious!!! I left out the green chillis simply because I don't like hot stuff. It was quite filling, tasty and very easy to make. Five stars!!

We love this soup. I use about 5 fresh Anaheim chiles and roast them myself instead of using the salty canned variety. I skip the tortilla garnish and instead squeeze lime on it. Also, this soup freezes beautifully.

where do you find tomatoes and tomato paste packaged in glass jars?

I am not familiar with the tomato products in glass jars. However, Hunt's offers Non GMO tomato products within a NON BPA liner can. This is clearly indicated on the lower left front of the can.Their NO SALT ADDED variety contains only (20) mg. per 1/4 cup. This is the best 'all around' that I have personally found to date. :+)

This is an absolutely wonderful recipe. It is one of my favorite soups. I have made it a couple of times and frozen individual servings--it is always a treat when it is Veggie Enchilada Soup night!

When I couldn't eat canned tomatoes or paste or sauce, I substituted raspberries.  Sounds weird but it worked.

Mary, Here's a link with lots of ideas for what to substitute for tomatoes:
One woman markets a product called Nomato. Its primary ingredients are carrots, beets, and onions.
You could also just omit the tomatoes and tomato paste, and increase the zucchini, carrots, or mushrooms to taste.

@Skinnyb45: and will ship tomato products in glass jars if there are none in nearby shopping areas. I found this by searching Google for "tomatoes in glass jars where to buy" and several options came up.

Very good. Next time I make this I'll be careful not to overdo the extra liquid (veg broth) because I added too much which I believe diluted the flavors/complexity - it was too thick otherwise or I should've left is as stew perhaps. Anyway, this recipe is fun to work with in terms of various toppings and it looked great and was delicious topped with Ezekiel corn tortilla strips. It's a keeper and next time I'll do better;).

Costco has huge bags of frozen organic corn, which is delicious. Haven't made this recipe yet, but sounds wonderful. Will use Ezekiel corn tortillas (also organic).

Wow, this is good! Tastes like tortilla soup only better! It took longer than the 30 minutes prep time- someone must be faster at chopping than I am- but it was well worth the effort. Makes a lot so there will be plenty to freeze and/or share. Thanks for the great recipe!

This soup is delicious! I left out the tomato paste. I figured that the carrots would be enough for sweetness and it worked. I will be preparing this soup in the future because it's easy, tasty and heavy enough for a cold day. We loved it!! Thank you Cari.

This soup was really delicious! I made a couple of changes. I didn't use any chili powder because to my surprise I was all out, and I pureed a portion of the soup just to make it a little creamier. Even without the chili powder it was delicious....I also added extra cilantro to the pot and as a garnish because I love cilantro. I highly recommend this soup and as the rest of the family is enjoying it too, I will be making this again. Thanks for the recipe!

Excellent.  I used frozen riced cauliflower.  Even better as a leftover!
