A must-try salad dressing! It perfectly complements this fruity kale salad and works well with any combination of leafy greens.

For the Dressing:
1/4 cup raw almonds
2 oranges, juiced
2 teaspoons balsamic vinegar
6 large chunks fresh pineapple
For the Salad:
6 leaves curly green kale, finely chopped
1 apple, chopped
1 cup red grapes, whole or sliced
1 cup fresh mango chunks


Combine the dressing ingredients in a high-powered blender.

Toss desired amount of dressing with the salad ingredients. Leftover dressing can be refrigerated for another use.

I have never made a salad dressing (except ranch). Please tell me what it means when you say 2 oranges, juiced. Do you squeeze the juice out and not use the orange, or what? Thanks! I really want to try this recipe!

Exactly. Squeeze the juice from two oranges and use that juice in the dressing.

Easy to make! Instead of juicing the 2 oranges, I threw in some canned and peeled mandarin oranges (without the syrup) into the blender. Also, I didn't have almonds, so I used cashews instead. It was a very satisfying salad, as I was very hungry... I would not have guessed that kale would taste so good with fruit but it tasted really refreshingly good!

I must say this was a wonderful salad. I too had my reservations with kale in a salad but it turned out great. Although my wife would like to use mixed greens next time, she's not that big of a fan of kale as I am raw like this. Either way, this is my new favorite salad.

This is a delicious kale salad. I omitted the pineapple only because I forgot to buy it. But otherwise the recipe was made for my husband and I as listed. We have extra of the yummy dressing left over for our other salads since that's the only part I did not cut in half. Great find!

This recipe is a winner! Delicious, easy to fix and of course, nutritional! I didn't have mango, so I substituted strawberries, added avacado and some pumpkin seeds. Will definitely make it again.

5 stars! Excellent! Baby kale, fresh mango, crisp Granny Smith tart apples, a few raw pumpkin seeds for garnish, slivers of red onion... Love it!

Dr. Fuhrman's Orange Cashew Dressing would work well.
