Ingredients

1/2 cup unsweetened, vanilla soy, hemp or almond milk
3/4 teaspoon pure vanllla bean powder or vanilla extract
1 teaspoon cinnamon
3 apples, peeled, cored and chopped
1/4 cup raisins, chopped
1/2 cup old fashioned rolled oats
1/4 cup ground raw walnuts
2 tablespoons ground flax seeds

Instructions:

Preheat oven to 350 degrees F.
In a bowl, mix the non-dairy milk, vanilla and cinnamon until combined. Stir in the chopped apples, raisins, oats, ground walnuts and flax seeds.

Pour into a baking dish (see note) and bake, uncovered, for 1 hour.

Note: An 8x8 inch baking dish works well for 4 servings.

This is one of the best deserts I've had. I just love it!!!! I also added some dates on top of the raisins. It went so fast. Next time I'm going to make triple the amount. so so yummy!!!!!

I love this cake. I don't use the egg white but I add a bit of nut flour, about 1/3 cup which really helps it all stick together. I've made it a few times and I make it in individual cake-cases and keep it in the fridge - my kids love it too - thanks!

I make this all the time (minus the egg white and soymilk, both of which are unnecessary to achieve the desired results) in a triple or quadruple batch. You can chop the apples first and then add all the other ingredients afterward, and it makes no difference whatsoever to the outcome or appearance. Adding a few walnuts is nice too if you're so inclined. Wonderful and something even SAD eaters seem to just love! I also agree that it's better the next day.

We tried this as a Thanksgiving dessert yesterday - it was a success, although it could have done with even more of the crumbled walnut topping than what JennWriter wrote above :)

It was good. There was not enough liquid to keep the pan from sticking; next time I'll use more. I used honey crisp and granny smith apples. The nut topping was essential; I used walnuts and cashews. We ate it cold the next day.

Cake??? Egg white??? Ok I am lost. I thought the reviews posted here are for the apple strudel. I don't see any egg whites that are to be used. I am making this now (in the oven) and will review when it is done. It looks yummy!

the hubs is allergic to nuts. What can I use to replace the ground almonds? Would wheat germ work?

I am not too keen on strong flavors and felt that the spices overpowered the dish. For those with similar taste, I would consider reducing the vanilla and cinnamon or eliminating altogether. The recipe as presented in the ETL book calls for and egg white which I substituted with half a banana. Otherwise, it is simple and easy to make.

okay, I made this exactly as the recipe calls for and the first time it was very dry, the second time I added a little extra liquid but all the raisins burned on top. Am I chopping the apples too small(bite size) or should I cover it? We like the flavor, but it is so dry and mealy. (I also used almond meal instead of grinding my own almonds, but I didn't think this should make a difference)

The early reviews of this recipe go back to 2006. It seems that lately Dr Fuhrman modified the recipe. I DO wish he would include the grams of sugar in the nutritional info.....

Even before reading this, I was making something similar for BF, and it is so good! Quaker Oatmeal mixed with H2O, with chopped apples (gala)I use one apple per serving of oatmeal, about 1 Tab chopped walnuts, 1 Tablespoon chopped almonds, some cinnamin, 3-4 drops of vanilla and a big pinch of ground flax seed, cook about 4 minutes, let it sit and add vanilla silk milk before serving. Anyway, I can't wait to try this studel recipe, I know it's going to be great!

This is a great recipe. My entire family loved it. I used almond butter instead of nuts and increased the oats. I will be making this for Thanksgiving. Perfect for kids and guests with food sensitivities.

I went apple picking so I had lots of apples. I made this with dates and the soaking water from the dates. I didn't use plant milk as I had none on hand. It came out delicious just as it has many, many times before.
