Asparagus, Mushroom and Leek Ragout

Leeks, asparagus and mushrooms are complemented perfectly by colorful sweet potatoes in this simple and delicious stew. Use fresh mint and parsley for a flavorful finishing touch.

Ingredients:

2 sweet potatoes, peeled and cut into 1 inch pieces
2 large leeks, white and pale green parts only, cut lengthwise and washed thoroughly, then cut into 1/2 inch slices
1 cup water
1 tablespoon Dr. Fuhrman's MatoZest or other no-salt seasoning, adjusted to taste
1 pound asparagus, trimmed, then cut diagonally into 2 inch pieces
1/2 pound shiitake or baby bella mushrooms, sliced
1/2 lemon, juiced
2 tablespoons fresh mint leaves, chopped
2 tablespoons fresh parsley, chopped
freshly ground black pepper, to taste

Instructions:

Place sweet potatoes in a pot and cover with water. Bring to boiling, reduce heat, cover and cook for 12-15 minutes or until tender. Transfer to a bowl.

Mix water with MatoZest or other no-salt seasoning. Heat about 1/4 cup of the water and MatoZest mixture in a saute pan and water-saute leeks for 3-4 minutes or until tender. Add to the bowl with the potatoes. Add additional liquid as needed and saute asparagus for 2 minutes, then add mushrooms and continue to cook until asparagus is tender and mushrooms soften, about 4 minutes. Combine with potatoes and leeks.

Before serving, drizzle with lemon juice, garnish with mint and parsley and season with black pepper.

I tried out this recipe last week because I happened to have most of the ingredients on hand. I used Mrs. Dash's tomato basil no salt seasoning instead of Dr. F's MatoZest and it turned out just fine. I also added a can of drained and rinsed red kidney beans since I didn't quite have enough mushrooms that the recipe called for.

I really enjoyed the tastes and textures of this dish. I ended up serving leftovers the next day over rice with some BBQ sauce, and it just hit the spot.

This recipe was so delicious. I roasted the potatoes rather than boiling them, because I love roasted veggies. The result was amazing. Everyone loved it. Definitely one I will add to my list of favorites.

This is delicious. I cooked it pretty true to the recipe, but I didn't have MatoZest, so I just used garlic powder, onion powder, and italian seasoning. I didn't have mint either, but I didn't miss it. Satisfying and tasty. Oh, and easy.

This was really delicious! I also did not have the mint and didn't miss it and I added 1 cup of pinto beans to make it more filling. This was easy and fast for a week night meal.

Could you also roast the leek as well? I haven't ever cooked anything with leeks, and I love roasted sweet potatoes. If you could roast the leek with the potatoes it would save a step.

Really tasty. I steamed the sweet potatoes and used an onion instead of the leeks because I didn't have any leeks.

Really nice, use more sweet potatoes if you like them. But if you are like my wifey she'll scold you if you add double the amount.
