This salad has all the right stuff and not just one but three cruciferous vegetables. It’s hard to get any more nutrient dense that this!

Ingredients:

1 bunch kale, tough stems removed, chopped
1 head broccoli, chopped
1 cup red cabbage, chopped
1 large avocado, peeled
3 tablespoons flavored vinegar (such as Dr Fuhrman's D'Anjou Pear)
3 tablespoons hemp seeds
3 tablespoons nutritional yeast
3 carrots, peeled and grated
5 green onions, chopped
1 clove garlic, minced
1/4 cup pine nuts or chopped raw cashews,almonds or walnuts
1/4 cup pomegranate arils, optional

Instructions:

Mix the kale, broccoli, cabbage and avocado in a bowl. Massage with your hands for 3-5 minutes to wilt the kale and mix in the avocado.
Stir in the vinegar, hemp seeds and nutritional yeast. Add the remaining ingredients and mix.
