No-bake Apricot Oat Bars

These bars are packed with oats, nuts, seeds and apricots. They’re perfect for an on-the-go breakfast or a healthy brown bag treat.

Ingredients:

3/4 cup old fashioned oats
1/2 cup raw cashews
1/2 cup raw almonds
2 tablespoons raw sunflower seeds
1 teaspoon ground flax seed
1 cup dates, pitted
1/3 cup raw cashew butter
1/2 cup unsulfured dried apricots, chopped
1 teaspoon cinnamon

Instructions:

In a food processor, process oats until coarsely chopped. Remove and set aside.

Place cashews, almonds, sunflower seeds and flax seed in food processor and chop into small pieces. Remove and add to chopped oats.

Add dates and cashew butter to food processor and process until very well combined and smooth. Mixture will start to form a ball. Add oat and nut mixture back to food processor along with dried apricot pieces and cinnamon and combine.

Press mixture into 8 x 8 inch baking pan. Make sure it is well compacted. Cut into squares.

I just made these and they are delicious. Favors my sweet tooth. I added a few more apricots as I was looking forward to the apricot flavor. I was wondering if you were supposed to soak the apricots first. I did put them in a little water for a few minutes as mine were pretty firm. Using my three-cup food processor challenges it. I had the same challenge when I was making the black bean brownies. I think I need a bigger food processor! Thanks for this recipe

I love these, I make them into bars and individually wrap them and keep them in the fridge. They are great for that afternoon snack. I also had a problem with the dates and nut butter in the blender but changed to freash dates and added the mixture by hand, well worth the effort.

The batter tasted DIVINE, but I had difficulty cutting it into squares - the batter just crumbles and doesn't stick together. DId anyone have this problem? I still haven't found cashew butter anywhere so I used almond butter, which arguably could have a different consistency, but my batch definitely seems to not have enough of the fat substance distributed to hold the oats together. I put in the refrigerator to chill and saw no improvement. So I won't be using my batch as a on-the-go granola bar, but perhaps save and use as a crust for berry cobbler or something. The batter really is SUPER delicious - and very sweet. I used half apricots and half raisins as I think cinnamon goes wonderfully with raisins.

Mine didn't stay together either - not sure what to do with it now.
I decided to add 1/8 cup water and more cashew butter and press into balls - it tastes great

I couldn't find cashew butter so the woman at the local health food store made it for me with the raw cashews I purchased. I found it to be considerably drier than almond butter so not sure it would be helpful in this recipe if already having trouble with dryness. I have not made this yet. I am pretty new to this but eager to learn.

I just made these and are they delicious!! Thanks for the tip to add water to the date/nut butter step, it was right on. I did grind my flax seeds first.

Fantastic!! They are like the Orange Goji bars, but even better. I freeze them because they taste better that way, and they are still soft enough to easily chew that way.

This recipe is a KEEPER! Quick, easy, healthy and delicious! Even better next day. My husband really enjoyed these; he says he wants to have a conversation with Dr. Fuhrman about why he can't eat lots of them in one day since they're so healthy:) I will make these often but I'm not going to let my husband eat them in excess;)
I'll try lots of variations with dried fruits; add in coconut flakes - lot's of possibilities!
I didn't have any issues w/cutting or texture - all held together well; I did warm the (refrigerated) cashew butter before blending. I've made the Orange Goji Bars so many times and to me and my husband they are beyond the 5.0 rating chart awesome! THANK YOU!

If wrapped well, these bars should keep for at least a week.

Amazing!!! I used almond butter. Also note that you need to process the dates and nut butter for a while till the "ball" forms. It sticks together nice after that!! 5 stars!

These are good, but taste more like dates than apricots to me. I soaked the dates and apricots before chopping and adding to the FP. The mixture seemed dry, so I added a bit of the soaking water. Next time I may change the proportion of dates to apricots.

I whipped up these bad boys in the  Vitamix. Worked great. A paucity of certain ingredients necessitated a few alterations. Short on dates so I made up the difference with some figs that I soaked for a half hour or so.  No almonds - subbed walnuts. No cashew butter so I used tahini. Althogh I doubt I improved the recipe, I doubt that my variations detracted in any significant way. A suggestion or two - when it comes time to press these puppies into the pan, wax paper is your BFF. I refrigerated the final product and staved off cravings in the meantime by making do with the bits and leavings from the Vitamix. I think it has been proven, btw, that anything eaten in this manner while cleaning up has no calories, although that may be an alternative fact. Oh, and even if the package says, "Pitted Dates" ... check for pits.
