Colcannon is an Irish dish of mashed potatoes and cabbage, usually seasoned with butter, but this healthier version is just as delicious.

Ingredients:

4 medium potatoes, peeled and quartered
1 large bunch kale, tough stems removed, chopped
1/4 cup water
1 teaspoon Dr. Fuhrman's VegiZest or other no salt seasoning blend adjusted to taste
1 large onion, chopped
1/3 cup plain soy, hemp or almond milk

Instructions:

Boil or steam potatoes until tender, about 15 minutes. Steam kale until tender and drain well.

Mix 1/4 C. water and VegiZest in a nonstick skillet and saute' onion until soft. Mash potatoes well, adding non-dairy milk as needed to reach desired consistency. Stir in kale and onions and rewarm over low heat, if necessary.

This is not bad if you like onion--which I do. It was filling.

Excellent - I made it with purple potatoes which adds a really nice color. I have made SAD colcannon before and this was just as good. I used leeks instead of onion, but otherwise stuck close to the recipe. Delicious. Even my son (who doesn't like kale much) thought it was good.

I am Irish, and yes, I have made my share of Irish Colcannon. I am soooo... happy to see this recipe! I enjoyed this version very much! However. I had to use traditional shredded cabbage and added nutritional yeast(I love the cheese taste in mine) and bit of black pepper.Next time I'll try kale!

I just had my first Colcannon at an Irish pub in Seattle. Loved it! I made mine with cabbage, kale, onion and potatoes, and then again with yams - which was also terrific.
