2 cups dried apples
1 1/2 cups unsweetened vanilla soy, hemp or almond milk
1 cup sliced fresh organic strawberries (or frozen, thawed), divided
10 regular dates, or 5 medjool dates, pitted
1/4 cup old fashioned oats
1 cup raw pecans
3 tablespoons ground chia seed
2 cups baby spinach
1/4 cup unsweetened, shredded coconut, plus extra for garnish
1/2 tablespoon cinnamon
1/4 teaspoon nutmeg


Soak dried apples in the non-dairy milk for at least one hour.

Preheat oven to 300 degrees F.

In a high-powered blender, blend the soaked apples, non-dairy milk, 1 cup of the strawberries and remaining ingredients until smooth. Add a little more milk if needed.

Spoon into small muffin cups or small oven-proof custard cups and bake for 20 minutes. Sprinkle with coconut. Chill in refrigerator before serving.

This was very tasty! I did have to add some extra soymilk as my Vitamix was struggling with this one. I would even serve this to my non ETL friends or family! Mine looked lighter in color than the ones in the picture. I made them in four servings vs. 12, so I may have needed to let it bake a little longer.

I just loved this dessert. I made a half batch and to half of that added some cocoa making choc-Apple-berry nut puddings. The strawberry on the top brings it to 5 stars, taste colour texture and flavour are delicious with or without cocoa. I made mine in mini muffin trays which were quite deep so needed longer to cook. Will make again.
