2 heads (12 cups) romaine lettuce
2 pears, peeled and chopped
1 cucumber, peeled and chopped
1/2 cup currants
2 pears, peeled and quartered
1/2 teaspoon grated fresh ginger
1/2 teaspoon fresh lemon juice
1 dried fig, stem removed


Toss all salad ingredients together.

Blend dressing ingredients in a Vita-Mix or other powerful blender.

Toss dressing with salad.

If desired, sprinkle with additional currants.

Dressing yields approx. 1 cup.

I loved this recipe and made it just as listed with the exception of tossing on a few slivered almonds. It was very satisfying and simple to make. I adore organic pears!
