4 cups carrot juice
2 cups water
2 medium potatoes, chopped into bite sized pieces
2 carrots, chopped
2 organic celery stalks, chopped
1 green pepper, chopped
1 yellow pepper, chopped
1 red pepper, chopped
1 medium onion, chopped
4 cloves garlic, minced
2 bay leaves
1 tablespoon Dr. Fuhrman’s VegiZest or other no salt seasoning
1 tablespoon Spike seasoning, no salt
1 tablespoon Bragg Liquid Aminos
10 Brazil nuts
4 ounces organic baby spinach
2 tablespoons nutritional yeast
fresh parsley, for garnish


Add all ingredients, except the nuts, spinach, nutritional yeast, and parsley, to a large soup pot. Cover and simmer for 20 minutes.

With a slotted spoon remove 1/2 of the vegetables and place in a Vita-Mix or other powerful blender. Add some of the soup liquid.

Add Brazil nuts to blender mixture and blend until creamy and smooth. Add back to pot and stir in spinach to wilt.

Stir in nutritional yeast.

Remove to soup bowls and sprinkle with parsley before serving.

Very sweet soup - I guess that's from all the carrot juice. It's delicious.

I just loved this soup, my first experiment with a Dr Fuhrman soup and it was delicious. I generally dont like capsicum but it enhanced the flavours. The soup is even better if you eat it the next day all of the flavours marry. Its is delicious!

Loved this!! I blended ALL the veggies-- even the spinach. Deee-licious! My daughter who "hates peppers," had a HUGE bowlful.

I blended all the veggies. Used arugula instead of spinach. Very tasty. I'm not a soup person, but this soup really had a great taste, sweet but not to sweet. I forgot the onion but that hasn't detracted from the taste. I can't wait for the flavors to marry, lunch will be delicious.

This soup is very good and easy to make. We make it about once a week and get several meals out of it for the two of us. I would highly recommend it.

I made this soup tonight. My husband and I are eating ETL, and, again, we found another great recipe. I didn't have all of the veggies the recipe called for, so I put in some butternut squash instead of potato, some green beans, and mushrooms. The taste was fabulous. My husband said it reminded him of a vodka sauce he used to have over pasta. Thank you again, Dr. Fuhrman. We are eating likes gourmets!

Sounds wonderful, my husband and I made something similar to this a month ago including butternut squash with the carrots, quite yummy.

(Newbie here....)This recipe sounds wonderful and I'd like to try it. I've seen many recipes on this website that call for carrot juice as an ingredient. Is there any particular brand that is better than another or am I to assume everyone is juicing their own carrots? Thank you for your help!

Delicious!! The worst part is chopping up all the veggies but after that, super easy to make. Loved the flavor - I used almonds because I did not have Brazil nuts and it was great. Hope it freezes well because it does make a LOT of soup.
