Why Eggs Raise Your Risk of Heart Disease and Diabetes
For decades, eggs have carried a reputation as the "clean" protein — a food even the most health-conscious eater could feel good about. But in this episode of the Eat to Live Podcast, Dr. Fuhrman tells his daughter Jenna he wouldn't eat an egg today, and walks through why he believes the studies defending eggs are hiding a much bigger risk than they appear to show.
The Ceiling Effect: Why the Studies Undersell the Risk
Several widely cited studies — including the Million Veterans study1 and a pooled analysis published in JAMA2 — found that adding one egg a day was associated with roughly a 15 to 17 percent increase in cardiovascular and all-cause mortality risk. On its own, that sounds modest. Dr. Fuhrman argues it isn't, once you understand what he calls the "ceiling effect."
He compares it to cigarette smoking: someone who goes from two packs a day to three packs a day sees a smaller jump in lung cancer risk than someone going from zero to one pack, because the damage from the first two packs already did most of the harm. Egg studies, he explains, are done on Americans already eating hundreds of milligrams of cholesterol a day from meat and cheese — so their cholesterol receptors are already near saturation. Adding eggs on top barely moves the needle. Layer that same amount of cholesterol onto a genuinely low-cholesterol diet, he says, and the relative increase in cardiovascular risk may be dramatically higher.
When Eggs Meet Insulin Resistance
The risk, Dr. Fuhrman says, isn't distributed evenly — the cholesterol content of eggs is more toxic for someone who is overweight or insulin-resistant, or at risk of cardiovascular disease.3, 4
He points to research suggesting that in people who are overweight or insulin resistant — which he estimates covers a large share of the more than 85 percent of Americans currently classified as overweight — the cholesterol in egg yolks may damage insulin-producing beta cells while excess weight worsens insulin receptor function.5, 6 For someone already living with elevated blood sugar after meals, he suggests eggs can also interfere with the body's ability to clear cholesterol from the bloodstream.
This matters for pregnancy, too. Obstetricians routinely screen for gestational glucose tolerance, and Dr. Fuhrman connects the dots: added weight gain plus added dietary cholesterol, he argues, may compound the metabolic strain of pregnancy rather than support it — even though eggs are frequently recommended for their choline content.
The Protein Myth
A recurring theme: genuine protein deficiency is nearly nonexistent in the United States. Dr. Fuhrman notes that a Nutritarian diet built on greens, beans, nuts, and seeds delivers about 25 grams of protein per 500 calories — meaning a 1,500-calorie diet already provides roughly 75 grams of protein, comparable to or higher than diets built around meat. A cup of lentils with a couple tablespoons of hemp seeds, he points out, matches the protein in a 4-ounce steak.
Egg Whites, Protein Powders, and the IGF-1 Question
For those chasing extra protein anyway, Dr. Fuhrman is cautious even about egg whites, whey, and soy protein isolate. He explains that their concentrated methionine and cysteine content may activate IGF-1 and mTOR — growth pathways he ties to accelerated aging and cancer promotion.7-9 He reserves these concentrated proteins for two groups: elderly people who are frail and can't eat enough food to meet their needs,10 and athletes or bodybuilders who are knowingly trading some long-term health for size and performance.
Good News: Choline is Already in Your Diet
The hopeful message: choline, like protein, is abundant in beans — especially soybeans, lentils, nuts, and seeds — no eggs required. Dr. Fuhrman also touches on TMAO, a gut-bacteria byproduct linked to cardiovascular inflammation, noting that people eating mostly plants have too little of the relevant gut bacteria built up for occasional eggs to matter much — but regular consumption changes that.11, 12
Supplementing with creatine
As a bonus, the episode closes with a look at creatine, which Dr. Fuhrman has started recommending in modest doses, especially for some older adults, citing possible benefits for muscle mass and cognition alongside a caution for anyone with kidney issues.13-15
