Porcini Mushroom Gravy

Dried porcini mushrooms give a wonderful savory flavor to this hearty gravy. Serve it with your favorite vegetables or Dr. Fuhrman’s Thanksgiving Non-Meat Loaf.

Ingredients

1/2 cup dried porcini mushrooms or Dr. Fuhrman's Forest Mushroom Blend
1 medium onion, thinly sliced
6 cloves garlic, minced
1 cup mushrooms, sliced
3 tablespoons whole wheat flour
2 tablespoons nutritional yeast
1 teaspoon coconut aminos
1 tablespoon Dr. Fuhrman's VegiZest or other no salt seasoning, adjusted to taste
1 cup water
1/2 tablespoon balsamic vinegar
1/8 teaspoon dried sage
1/8 teaspoon black pepper

Instructions:

Soak dried porcini mushrooms in 1 cup very hot water until soft, 10 to 15 minutes. Drain mushrooms, chop finely and reserve soaking water.

Heat 1/8 cup water in a medium saucepan, add onion, garlic and mushrooms, cover and cook over low heat until onions are soft. Add the flour, nutritional yeast, Braggs, and VegiZest. Gradually add 1 cup water along with the mushroom soaking water, stirring constantly. While stirring, bring the gravy to a boil, reduce heat and simmer until thickened. Add vinegar, sage and black pepper.

what is braggs liquid aminos? Where do I get it?

Many co-ops and healthfood stores stock it.  Its an interesting product line, essential for the nutritarian cooking.  If you don't see it request it in writing from all the stores you shop or potentially would shop.

Bragg liquid aminos are now off-limits as they are high in sodium.  I'm not sure why they were ever allowed.  Coconut aminos have replaced Bragg liquid aminos--they have 1/3 of the sodium.

You can find Bragg's at just about any grocery store, but you may have to ask management where to find it. I find it at Kroger, Publix, etc.

Braggs is like a soy sauce and it contains beneficial amino acids. It is readily available in most large grocery chains.

I hate flour gravy of any kind, so im going to use corn starch in mine so it won't get lumpy or taste like I put a loaf of bread in it.

I am going to experiment with coconut flour maybe almond.  Even two tablespoons of empty calories is too much.  I tossed all the non whole flour when I started this. I am thinking of sending the whole thing through the vita mix and freezeing it cubes.  A staple like garlic butter, but in the fridge

.  The porcini's are pungent and expensive so it seems the way to go. Gotta make that dollar hollar.

This is an excellent gravy. I have been making something very similar. The only difference is the balsamic vinegar. This was a first for me but still very good. I will serve it with a bean loaf and some steamed greens.

This recipe is awesome!  I made the recipe as posted with the exception that I used cornstarch instead of flour.  This gravy tastes amazing, and I will definitely be making this again.  I used the gravy over some wild rice.  YUM!  Five stars!!

Dr. Fuhrman does not reccomend rice.  But if you have to use some up, be sure and soak first and rince three times to remove the POP's.

Not true that Dr. Fuhrman doesn't recommend wild rice.  Of course white rice is off-limits, and recently brown rice due to its arsenic content, but wild rice is fine.  Splitting hairs, wild rice is not a grain, it is a seed.

Cremini mushrooms are fine in their own right, but they don’t have the same rich,deep flavor that dried porcini bring to the table!  When you use the porcini water be careful not to add the sediment that has collected at the bottom during the soak.  You will appreciate choosing the porcini!!!

If you have a mushroom festival within driving distance go!  You can easily grow your own now with kits. And if you buy a large amount on a day trip you can dry at home and savor them for months. A designated machine is best but you can use a toaster oven, a screen in the sun, or your regular oven.
