A walnut, pecan and macadamia tart shell with apricot pomegranate filling is topped with fresh berries and kiwis. A beautiful dessert that's perfect for a special occasion.

Ingredients:

For the Filling:
1 1/2 cups water
1 cup dried apricots (unsulphured)
1/2 cup Goji berries or chopped dates
1/4 cup pomegranate juice
1 tablespoon fresh lemon juice
For the Tart Shell:
1/2 cup walnuts, ground
1/2 cup raw macadamia nuts, ground
1/2 cup raw pecans, ground
1/2 cup oatmeal, ground
8 pitted dates or 4 date/coconut rolls
3 tablespoons unsweetened shredded coconut (see note)
For the Fresh Fruit Topping:
1 cup organic strawberries, sliced in half
1 cup blueberries
2 cups sliced kiwi fruit
2 tablespoons unsweetened shredded coconut

Instructions:

To prepare the filling, Simmer the water, apricots, and Goji berries on low heat, uncovered, for about 20 minutes or until the apricots are plump and tender, stirring regularly to keep from sticking.

Place water, apricots, Goji berries, and juices in a high-powered blender and blend until smooth and pudding-like.

To prepare the tart shell, knead the ground nuts and ground oatmeal with the dates and coconut until well combined. Pressing the mixture into the bottom of a glass or ceramic pie or tart pan.

Spread filling evenly over tart shell and chill.

Attractively arrange sliced fruit on top of chilled filling and sprinkle with coconut.

NOTE: You can also make this in individual tart pans. Feel free to use any fresh berries or sliced fruit.

For the tart shell: if using the date/coconut rolls you can eliminate the shredded coconut.

Opps! Last time I couldn't post anything on the recipe until the end of the month so I posted under the cooking forum topic "Beaware if you're making the fruit tart". I couldn't get the tart shell to stay together (I did substitute Brazil nuts for pecans...maybe made a difference.) so added soy milk. Also tart shell amounts as listed did not make enough shell for an 8 inch glass pie pan. See my post for more details as per amounts, etc. and some variations I tried.
Haven't eaten yet so won't rate. I was making shell and filling ahead for Sunday and will put fresh fruit on Sunday morning.

I made this and it was really delicious. I used pecans and didn't have a problem with the crust although I did add more date rolls than were specified so maybe that helped. I also used dried gooseberries instead of goji berries in the filling which maybe made it more tart then it should have been. However, it still tasted awesome and was really easy to make! I also think the filling(before chilling) by itself would be yummy just as a desert especially in the winter.

Ahh,now for the verdict. Well, my husband, me and my sister ate it. (And they are not doing Eat to LIve). And they liked it. It was Okay-Goodish...definitely not the Excellent of the Poached Pears With Chocolate and Raspberry Sauce.

It was, to my taste, with the changes I made, just too much...too many flavors and they were all intense...didn't blend well:
1)The original gogi berry/apricot filling did plump up the berries and if you like gogi berries, you'd probably like it. I don't think my husband and sister would have eaten it that way; as it was, they put whip cream on it! I thought adding the raspberries to it would improve it and give the raspberry/chocolate contrast but with the gogi berries and unsulfured apricots, the raspberries were just overpowered.
2)The chocolate sauce was good but didn't go well with the apricots and gogi berries. I think if I made it again. I would just use the chocolate sauce (from the Pomegranite Poached Pears recipe) in the tart and put the fruit on it.
3) It did look gorgeous. I put the fruit on Sat. nite--grapes around the outer edge, then a row of raspberries, a row of strawberries, and a circle of blueberries in the center.
4) It tastes better as it ages. My husband did eat left-overs of it.

one of my favorite recipes and I have served this to 3 other non-etl families all who asked for the recipe. I too, generally use larger portions for the crust to cover the pan, but I have no problem keeping it together.

Dukhniwaran,
This recipe doesn't call for any chocolate. Maybe try not using the grapes and raspberries to cut down on all of the flavors. Just a suggestion. I think the recipe, if using the called for ingredients, is perfect in texture and flavor.

This was an amazing dessert! The crust is phenomenal. The combination of fruits allowed for a variety of taste without overpowering the pallet and the nut combination added the perfect texture (not to mention the delightful taste) I used the coconut rolled dates and found I used quite a few more than called for in order to hold it all together and fit my tart plate. I could taste the hint of coconut which only added to the positive experience. YUM! I look forward to making this again. My (non ETL) parents enjoyed it as much as my husband and I.

I made this exactly as specified. This is awesome! I love it! I wanted to eat the whole thing in one sitting. So much for caloric restriction......It was amazingly good. I will make this again and again and again!

I loved this recipe. I could have just eaten the crust alone. I made this at a non-ETL event - it wasn't necessarily a hit, but it was tolerated by a few. I ate a ton of it and plan to make it again in the future. I may experiment with replacing the dried apricots with a different fruit.

Anyway, my question is: What in the world is Gac Juice and where do we find it? Thanks for your help.

my friend and i have a food blog and chose to make this for dessert. this was absolutely incredible. it's going to be a staple for parties and potlucks forever! we had a couple confusing moments... like what is gac juice???

made some minor alterations though. here they are:

crust: all the nuts it called for equalled 3 cups. if you're on a budget and can't afford walnuts like me, macadamia nuts, goji berries, do this version, it's amazing

we used 1 1/2 cup raw almonds, 1 1/2 cup raw cashews

apricots, dried cranberries, and dried currants. (this was yumm)

The only thing that we would make different is: the crust. definitely NOT enough stickiness/ firmness. it basically crumbled

One thing the recipe does not mention is that you need to blend the dates and coconut flakes in a high speed blender before kneading with the ground nuts/oatmeal. This will provide ample stickiness!

I made this last night for guests and it was a huge hit.

I put the nuts through the grinding machine that I use to make nut butters after reading comments here about the mixture being too dry. I then used a little whizzy machine (I think it's for coffee beans but we use it for flax or almonds) for the oatmeal, chopped my dates, mixed the dates and oatmeal roughly with the nuts and fed the whole lot back through my machine and gave it a final mix through after that. Worked a treat - no worries about being too dry - and there was plenty to amply cover my pie dish. It was still a little bit crumbly to serve - next time I might chill it in the freezer for a bit before adding the fruit, rather than just putting it in the fridge.

I substituted a couple of things - I couldn't find gac juice so I used pomegranate (the 'health food' shops here only sell pills!) and I realised at the last minute that we were out of dried apricots so I used dried peaches. (This was delicious.) And because it was a special occasion I substituted fresh raspberries for the kiwi fruit.

Someone gave me a jar of organic cashew and coconut cream, so I put that on the table for the cream addicts, who were duly impressed with the combination, and there were no complaints about the lack of dairy cream. In fact, most of the guests headed home intending to look up ETL.

I love this tart! Easy to make, and far too easy to eat.

Being gluten-, dairy-, and egg-free for four+ years, I often feel left out at dessert time. ETL and Dr. Fuhrman have changed that. I made this for Christmas dinner with my family. Even my dad liked it! My 10YO daughter loves it too, especially the apricot filling which she will eat alone as a pudding.

I followed the directions exactly and had no problems. I will make this again soon, trying out different fruit toppings (used blueberries, raspberries and kiwi).

This dessert was fantastic! I made it for people who would have shied away from this diet and they loved it. The flavors were wonderful and enjoyable. It was easy to make and a hit at the dinner. I added coconut whip cream and it just topped it off.

This pie was much easier to make than I anticipated. (I'm not a seasoned cook) I've seen comments about the crust not sticking together. I had no issues, but I did slice the dates into pieces and then used my fist to smash it all together. It blended quite nicely. I think the filling is more than you need for the crust, but perhaps if I had chilled it, it would have tightened up a bit. Still it was VERY tasty warm. I highly recommend this pie for a dessert. Kids will never know it's good for them. We LOVED the taste!

I made this exactly as stated in the recipe, and served it for breakfast when family came to visit. Everyone loved it. The flavors were amazing. This is definitely one of my favorite recipes.
