These cabbage wedges have a savory yet slightly sweet flavor. Coriander and caraway seeds are perfect companions for this cruciferous superfood.

Ingredients:

1 head green cabbage, cut into 6 wedges
4 tomatoes, quartered
2 tablespoons Dr. Fuhrman's D'Anjou Pear Vinegar or white wine vinegar
1 medjool or 2 regular dates, pitted
1/2 cup raw almonds or 1/4 cup raw almond butter
2 teaspoons no-salt-added stoneground mustard
1 cup water
1 teaspoon caraway seeds
1 teaspoon coriander seeds
black pepper, to taste

Instructions:

Preheat oven to 350 degrees F.

Place cabbage wedges and tomatoes on a lightly-oiled roasting pan.

Combine vinegar, dates, almonds, mustard and water in a high-powered blender and process until smooth.

Toast caraway and coriander seeds in a dry skillet until warm and fragrant.

Add blended mixture, caraway seeds, coriander seeds and black pepper to cabbage wedges and toss to combine. Cover with foil and bake until cabbage cores are tender, about 1 hour.

this sounds interesting... however I do not see 'mustard' listed in the ingredients, however it is in the instructions.
please update with the recommended type and quantity.

Wow! This is really good! It's low in calories too!
I had two of the wedges right off. If you like cabbage at all, you'll like this recipe. It's very easy to make. The only thing that was confusing was that it said "Place cabbage wedges and tomatoes on a lightly-oiled roasted pan" before you "toss to combine". I just tossed everything except the tomatoes in a large bowl and then put it all on the roasting pan drizzling some of the sauce on the tomatoes.
Whatever... The sauce is great and perfect for the cabbage.

I did not care for the texture of the cabbage from roasting. Some of the leaves were very tough. However, the sauce is a delicious compliment to the cabbage. Next time I will boil the cabbage and then top with this sauce. I think it would be 4 stars that way.
