Supreme Greens, Beans and Mushroom Soup
Need dinner on the table in 20 minutes? Use a carton of Dr. Fuhrman's Supreme Greens G-BOMBS Soup as a quick and easy soup starter. With just a few added ingredients, you will have a delicious and nutrient dense potful of soup simmering on the stove.
1 small onion, chopped
3 cloves garlic, chopped
10 ounces mushrooms, sliced
4 cups low sodium or no-salt-added vegetable broth
3 cups cooked cannellini beans or 2 (15 ounce cans) low sodium or no salt added, undrained
1/8 teaspoon black pepper
1/8 teaspoon crushed red pepper flakes
In a large pot, heat 2 tablespoons water and start to water sauté onions and garlic. When slightly softened, add mushrooms and continue to cook until mushrooms and onions are tender and liquid evaporates, about 5 minutes.
Add remaining ingredients and heat through, stirring occasionally.
Note: You can also add your favorite no-salt seasonings such as 1 tablespoon of Dr. Fuhrman's Mato Zest.
