Supreme Red Lentil Curry
A carton of Dr. Fuhrman's Supreme Greens G-BOMBS Soup is the secret ingredient in this tasty lentil curry. It adds rich flavor and a generous helping of kale and mustard greens.
1 cup red lentils, rinsed
2 teaspoons curry powder
1/2 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/8 teaspoon crushed red pepper, or to taste
1 clove minced fresh garlic
1 teaspoon minced fresh ginger
1 cup tomato puree, no salt added (see note)
1 large onion, chopped
Put lentils in a pot with 2 cups water. Bring to boil, cover, reduce heat and simmer until tender, about 15 minutes.
Combine curry powder, turmeric, cumin, chili powder, crushed red pepper, garlic and ginger.
Heat 2 tablespoons water in a large skillet and sauté onion until tender, about 5 minutes. Add spice mixture, increase heat to high and cook stirring constantly, until fragrant, 1 to 2 minutes.
Stir in the tomato puree and Supreme Greens, cook for 5 minutes. Add cooked lentils and continue cooking for an additional 5 minutes.
If desired, serve with brown basmati rice.
Note: Look for tomato puree packaged in non-BPA cartons.
