This recipe captures the flavor of classic old-fashioned baked beans without using any of the usual unhealthful ingredients. It's sure to become a family favorite!

Ingredients:

1 large onion, chopped
4 cloves garlic, chopped
1 cup low sodium or no-salt-added tomato sauce
1 apple, cored and quartered
1/4 cup raisins, soaked in hot water to cover for 30 minutes
1 tablespoon apple cider vinegar
2 tablespoons prepared mustard, no-salt added or low sodium
1 teaspoon Bragg Liquid Aminos
1 teaspoon chipotle chili powder
3 cups cooked red kidney beans or 2 cans low sodium or no-salt-added, drained

Instructions:

Preheat oven to 350 degrees F.

Heat 2-3 tablespoons water in a small pan and sauté onions and garlic until tender, about 5 minutes. Add small amounts of additional water as needed to prevent burning.

Blend tomato sauce, apple, raisins and soaking water, vinegar, mustard, Bragg Liquid Aminos and chipotle chili powder in a high-powered blender until smooth.

In a large casserole dish, combine the kidney beans, blended mixture and sautéed onions. Cover and bake for 50 minutes.

Very tasty! We added some soy chorizo which kicked up the spice and flavor some. Both my husband and I really loved it! Would also be good with some jalapeƱos.

I woke up this morning thinking how much I felt like baked beans and wondering if there was a recipe here... opened my email and it was the recipe of the day! So I made it for a late brunch, and served it with water sauteed mushrooms and wilted baby spinach. It was fantastic, we both loved it and it is going straight to the favourites file for us!

This goes into the permanent recipe file! I followed the recipe exactly and it was my husband's favorite after the first bite! Much better than vegetarian baked beans with a boat load less sugar!

Delicious! I'm so glad to have a healthy baked bean recipe. I used red beans instead of kidney beans and it is yummy. Although I love chipotle chili powder, used only 1/4 teaspoon so my kids could eat it. (They aren't fans of spicy foods right now.) Thank you Dr. Fuhrman and team. We all agree this is a winner!

These beans are really yummy, I frequently take them to parties. We like to put the leftovers in our salads for lunch. I did use less chiptole chili powder so it is less spicy for my kids. The first time I made them was too strong and my little ones wouldn't eat them.

Loved the flavor! Although my baked beans ended up with a lot of moisture even after cooking for a full 50 minutes (probably because I used the 2 cans option instead of a full 3 cups of beans). So we treated it like soup and will definitely keep this as one of our all time favorite recipes!

This recipe was awesome! I love a healthy baked bean recipe! We didn't have chipotle Chili powder, so we used regular chili powder, and it was still great! Thanks for the great recipe! Will make for my non-ETL family, and they will love it!

I could live off of baked beans (and maybe a few oher indulgences) so i was anxious to try this recipe as i have enjoyed most recipes here i have tried. I did not enjoy these at all. The fact it was mostly a bean soup may have hindered my enjoyment but regardless i will not make these again.

Delicious and easy to do! We left out the Bragg Liquid Aminos and the chili and cooked the beans...on the stove top. This recipe reminded us of a traditional baked bean made with ketchup, mustard and brown sugar - we are happy to now have a recipe with healthy substitutes and the same delicious taste. Thank You for the recipe!

These were great! Lots of flavor and easy to make. I made them for the 4th of July but they'd be fantastic anytime. They were a little spicier than I thought they'd be, but that was a good thing. I didn't have prepared mustard so used 1 tbs. of dried. Next time I'd double the recipe if taking to an event. These went fast!

These beans are delicious! I was surprised at the wonderful taste and how easy they were to make. I am not a kidney bean fan, so next time I whip up a batch, I will use a white bean. Also, baking these left my house smelling good all day.

This quick and easy recipe is a keeper. Modified the recipe because I wanted to use up the whole can of tomato sauce. I used three cans of beans (2 great northern, 1 pinto). The consistency turned out perfect. Tasted even better the next day. Next time I plan on adding diced green pepper.

This sounds crazy, but when I went to make these I learned I didn't have the raisins I thought I did so I poured boiling water over 4 dehydrated figs, let sit 10 minutes, then subbed them for the raisins ..... and it was amazing. The fig seeds basically dissolved. Also I used a slow cooker for a couple of hours instead of the oven. Yum yum yum.

Pretty good, except most standard baked beans call for navy or pinto beans. Kidney beans are just too big - I'll change that up next time. I also only used 1/2 the raisins and was still very sweet. I didn't have any chipolte chili powder, so used 1/2 regular and 1/2 smoked hot paprika. Of course I added a jalepeno as I had a huge crop this year and have been adding a minced jalepeno to everything.

i've been eating the baked beans for my local supermarket deli, it's loaded with all the wrong stuff like sugar and corn syrup. i'm so happy Dr. Fuhrman had not only one but two recipes for baked beans. but suffering PTSD i am not always able to do the cooking, it takes to long. how about sell us the stuff like you do soups and salad dressing?

This is delicious! Amazing. My husband walked through the kitchen and said "apples in baked beans?" and I just said "uh-huh." I had no tomato sauce so used spicy salsa, and just regular chili powder (much more). It is cooking on our wood stove instead of in the oven. So very good! 5 stars for sure! 7/1/15 Update: I've made these several times and will make another batch today. I used 4-5 cans beans as it seemed the sauce would go a long way. I put a couple tablespoons of tomato paste (no salt or sugar) in and add a bit more water to make "tomato sauce". I think I may make the sauce ahead and either can or freeze it for future use. Delicious recipe. These are even better cold the next day. I'm sure they could be frozen, too, but we ate every bite in a few days.

This is very good!!!! Next time I make this I will doule the ingredients for the sauce. I was out of pasta sauce, so I used tomato and basil pasta sauce from a glass jar. I was out of Bragg Liquid Aminos, so I used soy sauce. I made this with black beans as that is the beans I had cooking in my pressure cooker for today. (Beans can cook much faster in a pressure cooker than in a pan on the stove.)

I added my cooked garlic and onion that had been water sauted to my high power blender with the other sauce ingredients. This is very delicious!!!!!!!

This is now one of my favorite recipies!!!!

Thank you Dr. Fuhrman and staff for recipies so we can eat to live!!!!!!

Today was our monthly meeting of our group - Suncoast Nutritarians. One of our group members brought this recipe and it was wonderful. She said she made it exactly as the recipe called for it to be made. She made it yesterday and then was reheated in the oven at the hosts house. I will definitely be making these. They are as close to the beans my mother used to make....but without all the SAD ingredients. It is the first baked bean recipe (nutritarian style) that I have really liked.

Made the recipe exactly as written and it was great!! Then decided to make it with navy beans for a family cookout July 3. Bad idea! Also subbed one container of unsweetened organic applesauce for the apple, which I won't do again. I used a honeycrisp apple the first time. I recommend you follow the recipe exactly as written.
