Enjoy summer's bounty with this simply delicious medley of fresh corn, tomatoes and basil.

Ingredients:

2 cups fresh raw corn kernels
1/4 cup chopped red onion
3 medium tomatoes, chopped
1/4 cup chopped fresh basil
Freshly ground black pepper, to taste

Instructions:

Heat 2 tablespoons water in a skillet and saute corn and onion, stirring occasionally until corn is tender, about 5 minutes. Remove from heat and let stand for 5 minutes. Stir in tomatoes and basil. Season with black pepper.

I dropped by the store and grabbed a couple ears of corn, but forgot to buy the basil... ooops. The corn on the cob was called "sugar and cream" (I guess they changed the name from butter and sugar corn :o) was it good! I cut the recipe in half, this recipe was simple, fresh tasting and wonderful!

This has become my favorite summer recipe! Growing my own basil so I never run out. Sometimes for variation I add avocado and some black beans with a tsp of lemon. Yummy!

absolutely fabulous ! I too added some lemon juice as well as some other stuff "hanging out" in my refrigerator. Many additions possible with this basic recipe

This was super easy and really delicious. I had never cut corn off the cob before but it was super easy. My husband and I loved this recipe. Perfect for a warm day. I will make this again!!!

I wish your recipes did not give some ingredients in cup measurements and some in pounds. Makes it more complicated jumping back and forth.

This recipe is FABULOUS!! I have made it numerous times and will surely make it until I can't get fresh tomatoes anymore. Absolutely love it!

This is a good base to build on. Tasty as is, but as someone else said can easily add beans, jalapeno, cilantro, green apple, etc.
