10 ounces spring salad mix
2 heads romaine lettuce
3 cups baby arugula
1 cup sliced endive
1 cup cherry tomatoes, halved
1/2 cup currants
1/3 cup raw sunflower seeds
1/4 cup finely chopped fresh chives
2 stalks organic celery, chopped
1 avocado, chopped
2 tablespoons chopped fresh oregano
1 tablespoon chopped fresh basil
1/3 cup unhullled sesame seeds, lightly toasted (reserve 1 tablespoon)
1 cup unsweetened soy milk
1 tablespoon rice vinegar
1/2 tablespoon raw cashew butter
1/2 tablespoon toasted sesame oil
4 pitted dates, or more to taste
1/4 cup finely chopped fresh chives


Toss all salad ingredients together.

Make dressing by first lightly toasting sesame seeds in a pan over medium heat for five minutes, shaking pan frequently.

Blend all ingredients, except for 1 tablespoon sesame seeds and the chives, until smooth and creamy.

Stir in reserved sesame seeds and chives.

Pour over salad and toss.

Very good but made a few modifications to what I had. No chives and used tahini oil instead of sesame oil

REALLY delicious! Found it because My basil, chives and oregano are going strong and I had arugula in the fridge. I followed the dressing recipe exactly except like Jeff no sesame seed oil so I added an extra Tbs of sesame seeds (extra good luck!) All I had for the salad was romaine lettuce, arugula, all the herbs, currents and 4 small carrots (carrots grated in the Vitamix!) I have to stop writting to take big bite fulls. Can't wait to try the awsome dressing with all the salad veggies. If I knew how to rate online it would be 5 stars!!!!! Thank you Dr. Fuhrman.
