Ingredients:

For the Basil Apple Dressing:
1/2 cup sliced almonds
1/2 cup pine nuts
2 apples, chopped (no need to peel if organic)
2 packed cups fresh basil leaves
4 cups fresh parsley (do not pack)
4 medjool dates or 8 deglet noor dates, pitted
For the Green Salad:
4 ounces (about 4 cups) organic baby spinach
4 ounces (about 4 cups) romaine lettuce, torn into bite sized pieces
2 cups Boston lettuce, torn into bite sized pieces
2 cups arugula
1 cup watercress leaves
2 heaping cups (about 6 ounces) snow peas, sliced
1 cup frozen peas, thawed
5 scallions, chopped
1 medium cucumber, chopped (no need to peel if organic)
1 avocado, chopped
1/4 cup raw pumpkin seeds, optional

Instructions:

For dressing, blend almonds and pine nuts together in a food processor or high powered blender. Add apples, basil, parsley, and dates and blend until creamy. Add a little water if needed to thin.

Mix all salad ingredients together and toss with dressing.
