What is nutritional yeast?
Nutritional yeast originates as the microorganism Saccharomyces cerevisiae, which is grown using beet molasses, then deactivated with heat and dried into flakes. Although it is the same species, nutritional yeast is different from baking or brewer’s yeast. Nutritional yeast has been deactivated, which means that it cannot be used for leavening or fermentation purposes. Instead, the primary purpose of nutritional yeast is the delicious, savory flavor it lends to recipes.
Most brands of nutritional yeast contain synthetic folic acid – Dr. Fuhrman’s does not.
The nutritional yeast at your local grocer or in the bulk bins at your favorite health food store is likely fortified with excessive amounts of several B vitamins, including synthetic folic acid. Since Dr. Fuhrman cautions against the use of supplemental folic acid, he recommends unfortified nutritional yeast as the healthiest option, to get the great flavor without the potential dangers associated with synthetic folic acid. Dr. Fuhrman’s Nutritional Yeast contains only naturally occurring vitamins and minerals.
